I don't think that having a phone number on the site will affect sales. Most of the time the phone number is there more as a trust signal than as an actual method of purchase, unless we're talking about something with a traditional background in phone sales, like insurance or travel bookings or whatever.
Here at Affilorama we have a phone number on the website, but our support staff will send people back to the website to purchase. Otherwise we'd have to set up a whole other payment infrastructure. I expect Rocket Languages has the same set up.
With Rocket Languages I know that cold traffic to their site doesn't do very well. But when you start sending targeted traffic (people looking for language learning products, courses, reviews, etc, rather than people looking for "free lessons") it converts well enough.
If your traffic has lower buyer intent, send people to their free trial, or put the signup form on your page. They have a good follow-up sequence with automatic promotions built in, and that will work better than just sending traffic to the sales page.
